- 1 pound of leftover Lechon cut into serving pieces
- 1 piece Laurel leaf
- 1 piece star anise
- ½ cup vinegar
- 1 piece onion cut into quarter
- 4 cloves garlic crushed
- ¼ cup soy sauce
- ¼ cup water
- 1 small can Pineapple Chunks
- 1 bottle Sprite/7 Up (8oz)
- Salt & pepper to taste.
Lechon Paksiw Recipe is a Filipino pork dish made with leftover lechon cooked in vinegar and garlic.
- Add some oil to pan and saute garlic.
- Add onion and lechon let cook on medium heat for 5 minutes. Allowing the pork fat to melt.
- Add soy sauce, vinegar, water, star of anice and laurel leaf. Cook until boiling.
- Add Pineapple and pour in the sprite. Cook on low for 10 minutes.
- Salt and pepper to taste.
